Chow Mein is a firm favourite, not only because it’s quick and easy to prepare, but full of flavour. The dish is so versatile that you can switch up the veg and protein as you please.

Ingredients
Chicken/Prawns
2x nests Lucky Boat No1 Thick Noodles
5ml Oyster Sauce
5ml Light Soy Sauce
3ml Dark Soy Sauce
20ml Vegetable Oil
½ Sliced Green Pepper
2x Sliced Spring Onion
1x Red onion
20g Beansprout
10g Sliced Carrots
3ml Sesame Oil
Method
- Place the noodles in boiling water
- Remove from the heat and leave to soak for 8 minutes until cooked
- Stir frequently to separate noodles and drain
- Heat the cooking oil in a wok/pan over a medium heat and stir fry red onions for 30 seconds
- Add peppers, spring onions, beansprouts, carrots and pre-cooked chicken or prawns
- Stir fry for 2-3 minutes until the veg are just soft (if using prawns then ensure they have cooked through)
- Add oyster sauce and light soy sauce, mix well and continue to cook for 1-2 minutes
- Add a few drops of dark soy sauce and sesame oil for fragrance
- Serve onto a plate/bowl and garnish with sliced spring onions.
- Serve with prawn crackers!
TIP: For a saucy chow mein mix the dark, light and oyster sauce in a bowl with cornflour and enough water to make a rich gravy before stirring through the noodles.
